Winemaking: The 2022 vintage of Volnay "Paux Bois" underwent traditional vinification, with fermentation lasting 12 to 15 days. The wine was aged for approximately 12 months in oak barrels, one-third of which were new, to impart subtle tannins and complexity.
Tasting Notes: This wine presents a delicate bouquet of red berries, including raspberry and blackberry, intertwined with the subtle fragrance of violets. As it matures, it develops enchanting notes of spices, cooked prunes, and game, adding depth and complexity. On the palate, it is light, fine, and elegant, with a harmonious balance and a lingering finish.
Cellaring: This wine can be cellared for up to 10 years. While it may be enjoyed in its youth, allowing it to age will enhance its complexity and depth.

Caviar De Neuvic
The 20 hectares of the Domaine are located in the town of Neuvic, along the Isle, the river which was at the origin of the first productions of caviar from Aquitaine in the 1980s. In 2013, the Caviar de Neuvic brand was launched during a grand inauguration at the Domaine de Neuvic, and opened its first ephemeral counter at the Boutique Noire du Printemps Haussmann in Paris.
Caviar de Neuvic invests in sophisticated research programs all aimed at improving the care given to fish & quality control in the production & selection of the finest roe.
