Variety: 100% Pinot Noir

Winemaking: The grapes are harvested manually, destemmed, and then placed into vats for fermentation for 12 – 15 days. Once this process is complete, the wine is kept in cellars for 15 months to mature and undergo its second fermentation in oak barrels.

Tasting Notes: There are notes of cherry, blackcurrant, and raspberry, evolving with a sweetness and notes of strawberry. The wine is light and soft, with fresh tannins.

Food Pairings: The Savigny pairs well with poultry or game, or other light meats such as lamb.

Caviar De Neuvic

The 20 hectares of the Domaine are located in the town of Neuvic, along the Isle, the river which was at the origin of the first productions of caviar from Aquitaine in the 1980s. In 2013, the Caviar de Neuvic brand was launched during a grand inauguration at the Domaine de Neuvic, and opened its first ephemeral counter at the Boutique Noire du Printemps Haussmann in Paris.

Caviar de Neuvic invests in sophisticated research programs all aimed at improving the care given to fish & quality control in the production & selection of the finest roe.

Our Wines

Through a rigorous selection process, our team explored different regions of France, from Champagne to Burgundy, & the Rhone Valley, evaluating numerous wines based on grape varietals, terroir, winemaking techniques, and vintage quality.
