Variety: 100% Chardonnay
Winemaking: After 10 days of fermentation in vats between 16 and 19 Degrees Celsius, the wines are put in a cellar for further fermentation. After 6 months the wines are ready to be bottled
Tasting Notes: The aroma is of citrus fruits and develops with a touch of honey. The finish is reminiscent of the barrels that the wine is aged in.
Cellaring: This wine can be kept for 3 – 4 years before service.
Food Pairings: This wine pairs best with fish and other hot seafood dishes such as shellfish. Other compatible dishes include cuts of pork or strong cheeses.

Caviar De Neuvic
The 20 hectares of the Domaine are located in the town of Neuvic, along the Isle, the river which was at the origin of the first productions of caviar from Aquitaine in the 1980s. In 2013, the Caviar de Neuvic brand was launched during a grand inauguration at the Domaine de Neuvic, and opened its first ephemeral counter at the Boutique Noire du Printemps Haussmann in Paris.
Caviar de Neuvic invests in sophisticated research programs all aimed at improving the care given to fish & quality control in the production & selection of the finest roe.
