Winemaking: The 2021 vintage was aged for 14 to 18 months, with 25% in French oak barrels to enhance its elegance and depth. The wine underwent traditional vinification and was gently filtered to preserve its character.

Tasting Notes: The 2021 vintage has aromas of violet, black cherry, and damp earth combine with subtle notes of candied fruit. The palate is harmonious and refined, with silky tannins, vibrant acidity, and a long, elegant finish.

Winemaking: The 2022 vintage was aged for 18 months, with 30% in oak barrels to enhance its elegance and depth. The wine is gently filtered to preserve its character.

Tasting Notes: The 2022 vintage has aromas of red cherries and raspberries combine with delicate floral hints of violet and rose petal. Subtle earthy undertones and a touch of spice add complexity. The palate is refined, with a velvety texture and a lingering, harmonious finish.

Cellaring: Can be kept for 15 years, may be opened early, however decantation will help bring out the aromas.

Caviar De Neuvic

The 20 hectares of the Domaine are located in the town of Neuvic, along the Isle, the river which was at the origin of the first productions of caviar from Aquitaine in the 1980s. In 2013, the Caviar de Neuvic brand was launched during a grand inauguration at the Domaine de Neuvic, and opened its first ephemeral counter at the Boutique Noire du Printemps Haussmann in Paris.

Caviar de Neuvic invests in sophisticated research programs all aimed at improving the care given to fish & quality control in the production & selection of the finest roe.
